The authentic dish in Gilan Province is favorite to many. Here is the recipe.
Note, you can replace chicken with duck, if desired.
Ingredients
Onions, medium, 2 nos
Chicken, 1 whole
Dill, 250 g
Coriander and parsley, finely chopped, 2 tablespoons
Eggs, 3 nos
Dried plums, 100 g
Oil
Salt, pepper and turmeric powder, for seasoning
Procedure
First fry 1 sliced onion in a pan till golden brown. Add in the chicken and sauté for a couple of moments. Add in the chopped herbs and sauté as well. Keep on till the herbs are soft. In a bowl, crack in the eggs and beat well so that the white and Yolk are integrated. Pour the beaten eggs all over the fried ingredients in a pan. Once they get solid, add the dried plums, without soaking them in water beforehand.
After 5 minutes transfer the entire ingredients into a pot and fill with 2 glasses of boiling water. Let it cook over the low flame. Once Chicken is well-done, season to taste with salt, pepper and turmeric powder. Turn off the heat and transfer the content into a large bowl or any desired dish. Serve either with rice or bread.
