Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.
Ingredients
1 cup grated courgettes1/2 cup boiled sweet corns, you can also apply canned corns
1/4 cup chopped onion
1 egg
1 cup fresh bread cubes
1 tablespoon milk
Salt and pepper for seasoning
1/3 cup strained yogurt
vegetable oil for frying
Directions
In a large mixing bowl, mix together grated courgettes, chopped onions, pieces of bread, and milk. crack in the egg and sprinkle with salt and black pepper powder. Grease a non-stick frying pan with oil and each time spread 1/4 of the prepared mixture in it. Allow till both sides are well fried and golden in color. Repeat with the remaining ingredients.Serve with fresh Persian bread and a bowl of yogurt.
