The first time Dorsa Kebab was made in the country by the chef Bayramali Hosseinalipour in 1387 and found many fans in a short time.
So that hundreds of domestic and foreign guests order the dish every day. Here is the recipe. For sure you will love it!

Ingredients:

1 kg calf sirloin
300 g onions
Salt and powdered black pepper for seasoning
1/4 teaspoon baking soda
1 egg

Procedure

First, clean the meat and remove the skin and fat. Grind in the mincer twice. Put in a large mixing bowl and add finely chopped onions and break the egg. Sprinkle with salt black pepper and baking soda. Knead well 5 minutes to mix the ingredients properly. Keep inside the refrigerator a half hour and then remove to follow the rest of the stages.
How To Put Onto Skewers?
The way of applying skewers is different with kebabs of this type. Take 200 grams off the mixture and shape into baking dough with your palms.Then take 1 skewer n your left hand and leave 5 cm on top of the skewer. Place the mixture round the skewer and press with your palm; put on a wooden chopping board and push the kebab with your fingers to widen . Using a thin bladed knife, turn it over and again try to spread the kebab. Adjust the size of the kebab with cutting the additional parts.
Take 2 more skewers to help you shape it better; put them in a distance of 6 cm from one another on the chopping board. Once again, place the knife below the kebab and flip over and place on 2 skewers, pushing the kebab to spread into 2 kewrs. Flatten with your palm immersed in water. It is ready now to grill. Make sure to lift them from the board altogether to preserve the from. finally lay on the brazier or in the grill.
How To Grill?
Grilling is different too. When placing on the barbecue or in the grill, make sure to reduce the flame to low. Wait almost 1 minute till tiny bubbles pop up on the surface of the kebabs. Then turn it over with your palm. Do repeat this 2 or 3 times till kebabs are consolidated. The skewers on either sides are removed spontaneously and only the main skewer remains. Once grilling is over remove it as well to place in a serving dish. Serve either with bread or rice. Bon Appetit!
