1 tablespoon liquid oil
1 large onion, finely chopped
800 g tomatoes, chopped
Salt and powdered black pepper for seasoning
1 liter chicken stock
2 pieces of wholemeal bread
25 g chopped coriander and parsley
Directions:
Heat oil in a large pot and saute onion 5 minutes. Pour in chicken stock and bring to a boil.
Cut pieces of bread into small cubes and add into the soup. Allow to simmer 10 minutes.
Pour soup into a blender and mix into a smooth puree. Turn back to the pot and heat gain. Season to taste with salt and pepper. A few seconds before serving add in chopped coriander and parsley. Serve hot. Bon Appetit!
