Ingredients:
Serving 6 to 8
500 g rice
500 g leek
1 kg dill
1 kg fish, of any type of interest
3 medium onions
200 g oil
1 tablespoon dried limes
1 dessertspoon turmeric powder
Salt as per taste
Directions:
Clean the leafy vegetables and wash and strain. Let all the water is drained and chop up the vegetables. Cut the onions into slices and fry in 100 grams oil till golden.
Add vegetables into the an and season with dried lime powder, turmeric and salt. Then reduce the heat to low and allow the water from the vegetable to evaporate. Cut the fish into fillets and put in a dish with 1/2 cup water and a little salt. Set the heat on low and allow to cook. Take the fillets out and remove their skins and cut into small pieces. Then put into the pan of vegetables , stirring till a little fried.
Put the soaked rice in a pot and bring to a boil and strain. Drizzle 50 grams oil at the bottom of the pot along with 1/2 cup water. allow to heat. Put half of the strained rice in and then spread a layer of sauteed vegetables and fish. Then put the remaining rice over and cover the pot and adjust the heat to low. In a saucepan pour 50 grams oil and 1/2 cup of water and bring to a boil. Then pour it all over the pot of rice. Allow 45 to 60 minutes till it is ready.
Transfer to a serving platter and make sure to mix well before serving. Bon Appetit!
