Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.
Ingredients:
Serving 8400 g spinach, cooked
3 tablesppoons olive oil
1 onion, grated in large size
2 large potatoes, peeled and cubed
Salt and chili powder for seasoning
8 to 10 eggs
Directions:
Saute chopped onion in oil in a pan till a bit golden in color and then add in cubed potatoes and keep sauteing till soft. Beat the eggs in a mixing bowl and sprinkle with salt and chili.Add the cooked spinach into the pan and saute well. After that, add the sauteed mixture, after cooling, into the beaten eggs. Grease a large round non-stick frying pan with some oil and spread the mixture all around the dish. Try to flatten the surface with a spatula. fry on both sides. Transfer to a serving plate and serve with fresh Persian bread. Bon Appetit!
