The dish is favorite to the Shirazi. If you ever give it a try, you will become a fan too.
Ingredients
Rice, 6 cups
Whole chicken, 1 no
Sliced carrots, 1 cup
Silvered almonds, 100 g
Silvered pistachios, 100 g
Sultana raisins, 1 cup
Barberry, 1 cup
Saffron

Directions,
Soak rice in water for some time. Clean the chicken and remove its skin carefully. Put it inside a pot filled with some water and also put in a whole onion. Once the chicken is well-done, shred it into tiny pieces.
Fill another pot with water and drizzle in a tablespoon of oil. Once the water is boiling, put the rice in and once soft, strain it. Sauté barberry in a saucepan with drops of oil, 2 tablespoons of water, and a pinch of saffron powder. In another saucepan, sauté raisins and slices of carrots and then cook with sugar and lemon juice.
Combine well all the cooked and sautéed ingredients together in a mixing bowl. To cook the strained rice, you should put a layer of rice in the pot and spread a layer of the prepared mixture on top of it. Again put another layer of rice topped with another layer of prepared mixture. Do it till all the ingredients are over. Close the lid wrapped in a piece of cloth. After a few minutes, the dish is ready! Yum yum!
Note, pistachios do not need sautéing.
