Ingredients
Chickpeas, cooked and finely ground, 2 cups
Ground meat, 2 cups
Sokhari powder, 2 tbsp
Fragrant herbs such as parsley, mint, origany, tarragon, 1 to 2 tbsp
Salt, turmeric and curry powder, as required
Onion, large, grated, 1 no

Walnuts, 100 g

First prepare fillings for Kufta. Fry sliced onions till golden in color. Then add turmeric and walnut together, frying. Turn off the flame. Transfer it into a strainer till its excess oil goes away. Keep the remaining oil for frying Kuftas. Now prepare Kuftas themselves. In a large bowl mix well ground meat, Minced cooked chickpeas, salt, turmeric and curry powder, fragrant herbs, grated onion, and Sokhari powder. You should knead the mixture in a proper way. You can even put the mixture in food processor. Once kneaded finely, take tangerine-sized prices and spread it in your palms.
Stuff it with the fillings of fried onions and walnuts. Then form them into a ball and arrange in a tray till you do all Kuftas.
Pour the remaining oil in a pan till completely hot. Then put the Kuftas one by one inside heated oil and fry. First try one to check it is not fallen apart. If it is, beat an egg with a fork. Roll Kuftas inside the beaten egg and then do frying. Turn them over till they are thoroughly fried. Once you have fried them all, put them in a strainer to drain the excess oil. Finally, go for the sauce; fried onions in tomato paste and water. You can adjust its consistency. Arrange Kuftas in the sauce and let it simmer. Delicious Kufta recipe is ready. Serve it with bread.
