The dish is, originally, made in East Azerbaijan , Tabriz specifically.
Ingredients
Rice, 3 cups
Persian Polo Noodles, 1 cup
Dried peach slices, 100
Dried apricot slices , 100 g
Butter, 100 g
Onions, fried, 3 tbsp
Salt, pepper and turmeric, as per taste
Sugar, 1 tbsp
Brewed saffron, 1 tbsp
Cinnamon, 1 tbsp
The recipe contains 2,500 kilocalories.
Reshte Polo with dried apricot rings
Procedure
Soak rice in salted water for 3 hours. Once ready, transfer it into a pot filled with boiling water. When the rice gets softened a bit, add in the Reshteh noodles. Let it simmer for a few moments and then strain. Take the soaked dried peach rings and apricot slices put in hot water for half an hour, and wash. In a saucepan saute melted butter, the dried apricots, dried peach slices, and fried onions, and season to taste with sugar, salt and turmeric. Also add in brewed saffron. Cover the bottom of the pot with pieces of Lavash bread or slices of potatoes arranged next to each other. Put part of the strained rice over and then arrange a layer of the mixture. Do this till all the ingredients are over. Put the lid wrapped in a piece of cloth and let it cook steadily over the low flame. In the meantime, sauté a few slices of dried apricot rings in drops of oil in a pan. Add in cinnamon, Silvered pistachios and if desired fried chicken fillets. Once the rice is ready, remove into a proper platter and garnish with sautéed ingredients. Serve it warm. Bon Appetit!
