Kofta or Kufta is a family of meatball or meatloaf dishes found in South Asian, Middle Eastern, Balkan, and Central Asian cuisine.
The dish originated in Shiraz.
Ingredients
500 g ground meat
1/2 cup chickpea flour
1 egg
2 onions
Salt, black pepper powder, and turmeric for seasoning
250 g coriander leaves, finely chopped
2 tablespoons tomato paste
3 tablespoons oil
3 glasses boiling water
1 cup half-cooked rice
Directions
Put all the ingredients in a large mixing bowl. The only thing you should keep in mind is that you should add chopped coriander gradually. Knead them all till you get a sticky firm mixture Put in the fridge half an hour. Saute 1 chopped onion in oil in a pot and add in tomato paste. Season to taste with salt, turmeric and black powder. Stir well to thicken the sauce. Then add in boiling water and reduce the heat to low.
Then remove the meat mixture from the refrigerator. Take a tangerine-sized piece off the mixture and shape into a ball. Repeat with the remaining ingredients. Fry the meatballs in oil and then transfer them to the boiling sauce on the heat. Allow them to cook 215 to 20 minutes on low heat. It's ready o serve. Bon Appetit!
