Ingredients:
1 cup sweet corn flour
1/4 cup water
1 tomato
1/4 cup butter
5 eggs
4 potatoes
1/4 cup sour cream
salt and chili for seasoning
1/4 cup fresh mint and basil eaves
1/4 cup olive oil
Cooking Duration:35 miuntes
Directions:
In a large bowl, put corn flour and mix with water to make dough. In a frying pan, pour olive oil and spread the dough at the bottom of the pan and cook 5 minutes on low heat. Then turn over and remove. In a separate bowl, mix the eggs, tomatoes, and butter and sprinkle with salt and chili to taste. Cut the potatoes into cubes and and place on the dough in a Pyrex dish followed by the mixture on top.
Put the dish in the oven and cook at 190 degrees Celsius 30 miutes. Once it is cooked, garnish with mint leaves, basil, and sour cream on top. Yummy! Bon Appetit!
