Ingredients:
500 g lamb shank ( bones removed)750 g leafy vegetables including, parsley, leek, coriander, mint and tarragon
3 to 4 eggs
2 medium onions
1 tablespoon yogurt
1 teaspoon baking soda
Salt and powdered black pepper for seasoning
Directions:
Cook meat in a pot of water along with 1 onion. Chop up the vegetables and add into the half-done meat.Allow till the water is gone. Let it cool and then grind them. Put in a mixing bowl and add in the eggs, yogurt, baking soda, and season to taste with salt and black pepper. Start kneading and keep on till the mixture is sticky to form. Shape pieces into small meatballs and then spread in your palm into patties. Heat plenty of oil in a non-stick frying pan and place the patties to fry. Fry both sides. Remove into paper towels till the excess oil is absorbed. Arrange in a serving platter and garnish with tomato slices and other vegetables of interest around. Serve with bread. Bon Appetit!
