Ingredients
Serving 3
300 g shrimps
2 cups rice
1 cup fava beans or black-eyed beans
1 cup syrup of tamarind
750 g fresh coriander
1 tablespoon dried fenugreek
200 g onions
3 cloves of garlic
Salt and paprika for seasoning
oil
1/2 teaspoon turmeric powder for shrimps and 1/2 teaspoon for rice
Here is the recipe for the delicious dish:
Procedure:
Soak dried fava beans or black-eyed beans in water. 2 hours for black-eyed beans work.
Wash the rice and soak in salty, cold water 1 whole hour.
Wash the coriander leaves and chop up finely.
Put 200 g of tamarind in 1 1/2 cups and strain to get a strong juice.
Wash the shrimps, equally, and remove its skin, and vein.
Drain the beans and put in a pot with water and salt. Allow till half-cooked. Make sure to remove the bubbles on top of the dish.
Chop up the onion and put in a pan over the low heat ( no oil) till its water is gone. Then our in a little oil and saute. Sprinkle in turmeric, pepper and salt as your taste allows. If desired, you can apply a pinch of curry as well. keep sauteing. Add in the grated garlic along with chopped coriander and dried fenugreek. Continue sauteing till the juice from leafy vegetable is gone. Then add in the washed and cleaned shrimps and allow 5 minutes till they are mixed and done. Wash the rice and put in a proper-sized pot with enough water. Allow till the rice is half-cooked. Don't forget to add 1/2 teaspoon turmeric while it is boiling. Then take out and strain. Mix with beans finely. Put the pot over the stove and grease the bottom with 2 spoons oil. If desired, you can apply the slices of potatoes or pieces of Lavash( a kind of thin loaf of bread) for Tahdig.
Place part of the mixed rice and beans and set a layer of shrimps and vegetables mixture. Keep going onto the top. The top layer should be sauteed shrimps.
Set the stove at a high heat and wait almost 5 minutes till the steam comes out. Then lower the heat. If you like, you can mix 3 spoons of oil with the same amount of boiling water and pour all around the dish. Give it 45 min to 1 whole hour till the rice is done. Serve with vegetables and drinks like yogurt. Bon Appetit!
Note, if you apply heat diffuser, you will have a perfect Tahdig.
Tahdig is part of the Persian style of cooking rice that is formed at the bottom of the pot. It is made with pieces of thin bread like Lavash. But potatoes and other vegetables like lettuce an be used as well. It is favorite to many as it is greasy and yummy.
